What says YUM more than blueberry muffins! This muffin-in-a-mug is sure to hit the spot! I love to eat it with a pat of butter on top and some extra berries. Sometimes I’ll enjoy my muffin paired with 1/2 cup of Greek yogurt, sweetener and 1 tsp of natural peanut butter mixed in as my side! This is my basic Mug Muffin recipe. I just change up the berries!
- 1 egg
- 1 Tbs. of water
- 1 Tbs. of coconut oil (or butter)
- 1.5 Tbs. of coconut flour
- 1.5 Tbs. of golden flax flour
- 1 Tbs of Truvia or Xylitol
- 1/2 tsp. of aluminum free baking powder
- dash of salt
- 15 blueberries (give or take a few)
I use a microwave safe mug for the muffin. I stir the mixture all the together and add the blueberries last. I stir them in lightly so they don’t mash. I microwave my muffin for 1 minute and 20 seconds. You may need to adjust the time according to how hot your microwave is. If the top looks wet, I put it in for another 20 seconds. I dump it out into a bowl and cut it in half. BUTTER!!! I love a pat of butter on my muffin.
I also use this recipe to make a yummy blueberry waffle! I add 1 or 2 more TBS. of water to loosen up the batter. You could add a little unsweetened almond milk to the batter as well if you don’t use water. The only trick to keeping this a nice S pancake is to keep the blueberries at or under 1/2 cup serving!
