Mom’s Breakfast Casserole! (S)

My mama is a great cook!  She would make this wonderful casserole for brunch that was a big hit with my husband and I.  I’ve been trying to make Shan breakfast in the mornings and came across my recipe card from mom.  With a few little tweaks it was THM friendly and just as yummy as when she makes it!  This equals a very happy husband!


The BEST Breakfast Casserole (S)

  • 8 eggs
  • 6 cups of cheddar or colby jack cheese
  • 1/2 cup of unsweetened almond milk
  • 1/2 cup of golden flaxseed flour
  • 1/4 stick of butter
  • 1/2 pound of diced ham
  • 1/2 tsp of onion powder
  • 1/2 tsp of garlic powder
  • 1/2 tsp of parsley
  • 1/2 tsp of chives
  • salt and pepper

Pre-heat the oven to 350.  I spray  a 9 by 13 baking dish with cooking spray.  I beat the eggs and then mix in the rest of the ingredients, minus the butter.  The deli will give you a nice piece of ham that you can dice or you can find it pre-packaged in a 16 oz bag. I usually buy it pre-packaged and I can get a few casseroles out of it or use it on salads or in breakfast burritos.  After it’s all well mixed, I cut the butter into little pieces and dot it over the top of the casserole.  I bake the casserole for 45 minutes to 1 hour.  I keep my eye on it to see when the top is browning nicely. This serves 12!   I often cut the recipe in half for the two of us but, the large casserole is wonderful for serving others or to last for quite a few days!  It heats up so well!  This recipe is great as well baked in cupcake tins!  I’ve done this for a grab and go portion.  You would need to adjust the cooking time though to 20 to 25 minutes.  Keep an eye on them.  This is a great recipe to stir up the night before so that you can just pop it in the oven in the morning.  Easy peasy!

*Add your favorite veggies!  Green peppers, onions, mushrooms, etc.  You could even add in some chopped bacon!  Serve with a dollop of sour cream and salsa for a Mexican flair! I love it like I originally posted it.  It’s just plain GOOD!

German Chocolate Shake! (S)

There is an ice cream joint in a town near us that has the best ice cream in Ohio!!  In the past we’d go there often after dinner and I’d get the same ice cream each time, German Chocolate.  I don’t know why but, for as long as I can remember it was my favorite flavor.  I love the protein shakes that Trim Healthy Mama has brought into my life.  I really like Swanson’s Premium Brand Whey Protein powder.  I have loved making many different flavor combinations over the past year and thought I’d share one of my favorites!  After missing my favorite ice cream I came up with a shake that satisfies my craving for the old favorite!  I feel super satisfied and knowing it’s sugar free and healthy makes it so worth it!


German Chocolate Shake

  • 1 cup of unsweetened almond milk (vanilla)
  • 1/2 cup of water
  • 1 scoop of Swanson’s Premium Protein Powder
  • 1 tbs. of cocoa powder
  • 1 tbs. of Truvia or xylitol
  • 1/2 tsp. of Gluccomanan or Xanthan Gum
  • 1/4 cup of 1% cottage cheese
  • swirl of heavy whipping cream
  • 1/2 tsp of coconut extract (optional but, I love it!)
  • 1/2 tsp of vanilla extract
  • 1 tbs. of unsweetened coconut flakes
  • 1 tbs of coconut oil
  • 1 ounce of 85% chocolate (I use Aldi’s brand)
  • 12 ice cubes (my preference)

I honestly put the wet ingredients in the blender or my Ninja and dump in the dry ingredients.  I do cut up the chocolate into a few smaller pieces before adding it in.  I then blend for 30 seconds or so before I add in the ice! Add the ice and let it mix til it’s a shake like consistency.

This is a great way to get your protein and to start the day off with some healthy coconut oil!  I love the benefits it brings to my lifestyle!  I hope you’ll love this shake as much as I do!!!  I don’t feel deprived on my eating plan.  I honestly LOVE it or I’d not have been doing it for over a year now!  You can read about that on my One Year Trim-a-versary post! 🙂

Angel’s Cake- Fuel Pull

Cake!!  Who doesn’t love cake!  I posted a lovely recipe from a friend the other day, called Angel’s Berry Cake!!  Man oh man it is divine!  It is a very Satisfying cake.  My THM buddies know what that means!  Well, the secret or not so secret thing is that the cake is a Fuel Pull when you take off the whipped topping!  Great news!  🙂  I thought I’d post just the cake recipe with a few ideas for topping that will keep it a Fuel Pull.  Big props to Rohnda Monroy for the idea and beautiful picture of the cake!


Cake Mix:

  • 1/3 Cup of Swanson’s Vanilla Whey Premium Protein Powder
  • 1/3 Cup of Truvia (or 12 packets)  Grind them after you measure it out.(or 1/2 cup of xylitol, powdered)
  • 6 egg whites
  • pinch of salt
  • 1/2 tsp. of vanilla
  • 1/4 cup of coconut flour
  • 1 tsp. cream of tartar
  • 1/2 tsp. of aluminum free baking powder

This is for the basic cake.  You could add other flavors or extracts if you want to get creative!

Pre-heat the oven to 350!

First, beat the egg whites with a shake of salt until they form peaks and become firm!  Add the cream of tartar and stir mix some more until even firmer. In another bowl sift or mix the dry ingredients together well.  I did grind up my Truvia. Fold the dry ingredients into the egg mixture. Sprayed a 9 by 9 glass baking dish with coconut oil cooking spray.   Pour in the mixture!  Easy! Bake for 25 minutes.  Keep your eye on it in case your oven bakes hotter or cooler than mine.


The first FP topping idea is pictured above!  Rohnda used the Lemon Mousse from page 367 in the book, a few berries and a tiny bit of Fat Free Redi Whip!  YUM!!

Tummy Tucking Ice Cream from page 368 would be divine on top!

Another idea from Aleah is to put some Cottage Berry Whip on top!  That can be found on page 379. 

You can use the berry layer on top of the cake as well and keep it a Fuel Pull.

  • 1 and 1/2  cups of berries (mixed, blueberries,blackberries, raspberries or strawberries)
  • 8 packets of Truvia or 1/8th cup xylitol
  • pinch of gluccomanan (add as needed)

In a saucepan, add  mixed berries or the berry of your choice!  Angel made this with all blueberries and it was divine!!!  I used mixed berries in mine.  Let it bubble and simmer down.  Add 8 packets of Truvia (or 1/8th cup xylitol) and a pinch of gluccomanan.  Let it thicken a bit.  Add more til you get it to the thickness you like.  Kinda like a jelly.   Let it cool.

One Year Trim-a-versary!

UnknownI’m so excited to have hit my ONE YEAR on Trim Healthy Mama!

A bunch of girls from my church and in homeschool circles in Columbus, OH were ordering books last December.  One of my dear friends, Janet told me about the plan.  I told her to add me to the list of ladies ordering.  I don’t think I realized at that moment what all the Lord was going to do in my life in the weeks to come.  I had NO idea.  I got my book and read as quickly as I could.  I know I kept having one light bulb after another turn on in my brain!  I had been on so so many “diets” and this book was busting the rules to most of those plans…if not ALL of them!  Atkins, WW, Low cal, low fat, Jenny Craig, Formula 3, etc…my mind was being blown!

I won’t name the ideas that were life changing for me as that is what the book is for!  The authors, Pearl and Serene, worked for five years to write the book!!  The work and effort they’ve put in is priceless to me and so many others who have had their lives changed.

I will tell you this:

  • I am eating good food!
  • I am not hungry.
  • I don’t count points!
  • I don’t count calories!
  • I don’t count fat grams!
  • I enjoy healthy carbs.
  • I love butter, coconut oil and olive oil!
  • I enjoy my veggies, berries and fruits!
  • I love desserts!  Cake, fudge, cookies and cheesecake!

There’s just a few of the things I CAN tell you! 🙂

I can also say that I am a happier, healthier, stronger person right now than I ever was one year ago.

Praising God today for changing me.  I am thankful for this book and how God used it to speak to my heart.  If you are overweight or unhealthy and you need help, read the book!!  This book is NOT about being skinny or about losing weight quickly.  This is about being healthy and eating to live life to the fullest!  I really do believe that!

Just a little post on my Trim-a-versary!!  To God be the Glory for all He is doing!

Cheesy Chicken Enchiladas! (S)

DSC_0002I love Mexican food!  Yes, I do!  A friend of mine was making a chicken enchilada recipe into a THM friendly recipe.  It gave me the idea to try to make one of my own!  Boy, am I glad I did!  This will be a favorite around here!  It was easy to throw together!  There is nothing better than a healthy meal that everyone can enjoy or that you can take along to a potluck dinner!  You could serve a side salad along with this to get some good veggies in your meal!

Cheesy Chicken Enchiladas (S)

Low carb tortillas (I used LaTortilla Factory) 3 net carbs!!

1/4 to 1/2 cup of onion, diced

4 chicken breast or a can of shredded chicken

1 can of green chillies

1 stick of butter

1 cup of sour cream

1 cup of Colby jack cheese + 1/2 cup more for the top

1 tsp of cumin

1 tsp of chili powder

1 tsp of minced garlic

salt and pepper

Cook your chicken in the skillet with some butter or you can use canned chicken like I did. The canned chicken made it one step easier.  Shred it if you cooked your chicken breast.  I mixed 1 cup of cheese in with the chicken.  I used 6 tortillas. I put this filling into the tortillas, evenly.  I wrapped each one up nicely and put them face down so they would stay shut. In a saucepan, place the butter, sour cream, cumin, chili powder, salt, pepper, green chilies, minced garlic and half an onion.  Heat until the butter is melted and the mix is smooth.  I poured this mixture over the tortillas.  I topped the tortillas with extra cheese.(about 1/2 cup)

I used a 9 by 12 glass baking dish.  350 for 30 minutes!

I ate two enchiladas for my meal.  I had a side salad as well.  I try to keep store bought carbs at 6 or under for a meal as the book suggests! This could serve 4 depending on how much your family eats.  You could possibly spread the mix between 8 tortillas and stretch it out!  This is so yummy!  We’ll have leftovers for my lunch this week.  You could put a little salsa or sour cream on top if you want.

My inspiration for this recipe was my dear friend, Angel.  She used some lavish bread for her wraps in this recipe.  She kept it at 1/2 a piece of Joseph’s Lavish per person.  She used another can of chilies and more of the spices listed.  You can really make this recipe your own!!   Just wanted to throw that idea in there as well.

Going Bananas Shake! (E)

DSCN0570Bananas have gotten a bad wrap!  I see comments slung left and right on the boards saying, “Bananas are off plan!”  I try to gently remind everyone when I see a comment that you can have a half of a banana in an E meal setting.  I think a great thing to do would be to go to the back of the index and look up bananas!

Page. 83 (The Energizing Meal)

“A word about bananas.  God made them and they are a wonderful food.  We buy them for our children, who are growing and still very insulin sensitive since they have young cells and run around all day.  We very rarely eat bananas ourselves, as they are more like potatoes, and can easily fatten an adult.  If you don’t want to say a complete goodbye to the them, stick to half a banana as a limit while eating E style.

Have protein WITH your banana!!  

Page. 596 (Frequently Asked Questions)

“Yes, bananas are healthy.  God made them for a purpose. They are excellent for growing children and for people who struggle to keep on weight.  The reason for this is that they are much higher in sugars than the other fruits we suggest.  Tropical fruits on a whole have less fiber and more sugar.  This doesn’t mean you totally exclude them from your diet.  You can have small amounts of these with E meals, e.g., mango in some salsa, pineapple in some cottage cheese, small piece of watermelon, or half a banana.  Personally, we stay away from bananas, but we had addictions to them in the past.  Three in one sitting was not beyond us, so they are trigger foods for us.”

I think one of the reasons the girls have spoken strongly about the banana is because they had an addiction to eating them in the past.  They are a trigger food for them!  If it’s a trigger food for you, you may want to avoid them!  I am not endorsing eating a half a banana daily but, one or two halves during the week with an E meal is fine, in my opinion.  It comes down to what your body can handle.

Page 596 (Frequently Asked Questions)

“We call bananas and other high glycemic fruits healthy since God made them, but only for those whose blood sugar can handle them.  If something is chock full of vitamins and minerals and yet causes your waistline to expand and spike your blood sugar levels, which is aging and inflammatory, it is not healthy for you.”

Be your own judge!  See how you feel after you eat that half of a banana.  If you do have insulin or sugar issues, just steer clear!

I don’t know why I’m thinking so much about the banana.  I have not eaten much of one since being on THM. I do buy them for my kids and they eat them up!  I just make sure they eat one a day and not a few for a snack.

I have an E style shake that I enjoy on occasion!  It’s base isn’t banana like many do when making smoothies but, it does contain half of a banana. 🙂  The key is having a protein source WITH the banana!

Going Bananas Shake!  (E)

1 cup of unsweetened, Vanilla Almond Milk

1/2 cup of water

1 scoop of Swanson’s Premium Protein Powder(vanilla)

1/2 of a banana

1/2 tsp of Gluccomanan

1 TBS of unsweetened cocoa powder (heaping)

1 TBS of peanut flour

2 tsp of Truvia or sweeten with a plan approved sweetener of your choice.


Salt (a shake)


I mix all my ingredients in my Ninja for 30 seconds or so.  I then add 14 cubes of ice! It’s the magic number of cubes for me! 🙂  You may like more or less.

I hope this post helps a little bit with the banana confusion.  The poor banana isn’t banned like the white potato or sugar..we just need to be very moderate and use them on occasion.

Rhubarb Berry Whip! (FP)

I have a confession to make.  I love rhubarb and strawberry together.  They are a match made in Heaven.  This past weekend when I spotted the rhubarb in the frozen fruit area at the grocery I grabbed a bag.  I knew exactly what I wanted to try! 🙂  I have a few recipes in mind but, here is the first, super simple recipe.  This is a yummy FP dessert or snack!  I even love to eat it for breakfast with a Frappe’!  Rhubarb is a wonderful FP fruit!!  You’d have to eat a whole lot of it to make it an E fueled dish. (like 2 cups!)


Rhubarb Berry Whip!

3/4 Cup of 1% cottage cheese

1/2 cup of frozen rhubarb

1/4 cup of frozen strawberries


3 packets of Truvia or your on plan choice of sweetener.

1 tbs of water

Place it all in the blender or food processor and turn it on!  I let it blend for a bit so it’s creamy.  SO YUMMY!!!

60 Pounds- Trim Healthy Mama

I am keeping track of my progress here on my blog for my own benefit. It took me two months to lose this past 10 pounds.  THM is not a quick fix, extreme weight loss, bandaid diet.  I am so thankful for that!  The longer it takes me to lose it…the more I feel like I am learning and making life-long eating habits!  Would I like to lose speedily?  Sure! I think everyone would but, it took lots of time to put on the weight I have so, it will take me time to get it off.  I am doing a lot more than losing weight. I am taking steps that are changing my life and how I live.  I am making myself healthier physically but, slaying my demons as I go.

I don’t physically feel like 10 pounds looks a lot different on me.  My clothes are looser and I’m down to a size 18 which is so neat!  It’s been a LONG time!  I have a lot more energy.  I feel like some are waiting for my failure.   I know that’s the truth of the matter.  “She’s done this diet gig before and gained it all back… plus some.”  I will say that I’ve never stuck with a program for this long.  I did weight watchers years ago..over 11 years ago and did very well.  It wasn’t a life-long eating program that I could stick with so, VERY quickly I gained it back.  I let some emotional hurts and broken promises bring me down.  I was a different person then with different dreams and goals.  I let music and singing rule my life at that time.  When things didn’t go how I wanted, I was selfish, hurt and became so low.  I wasn’t letting God’s word show me who I was to be in Him. I wasn’t surrendered to Christ and His purpose for me.  A big part of how successful we are in slaying demons and sin has to do with how our walk with the Lord is.  I must stay focused on Him and living on my knees in repentance.   I realize that many of you checked out just then or think I’m a religious nut.  I’ve been called worse.

So, here I am.  Praying this resonates with someone’s heart.  Are you struggling?  Maybe you need some time with God to rest in Him, ask forgiveness and to make a fresh commitment to fight those sins with Him that are plaguing your life?  He gives us new mercies each morning and He is faithfully waiting.

I will fight.  I will stay on my knees with God and keep focused on the path He has me on.

Pumpkin-Chocolate Chip Muffin in a Mug(S)

esv_coffee1I almost died today and melted into a puddle after tasting my new muffin in a mug/bowl creation!  Yes, I’m dramatic!  It was really so so good!

Let’s cut the small talk.  I know you are here for one thing and one thing only…the recipe!

Pumpkin-Chocolate Chip Muffin in a Bowl! (S)

1 egg

1 1/2 TBS of almond flour

1 TBS of golden flax flour

1 TBS of cocoa powder

1/2 tsp of aluminum free baking powder

pinch of salt

3 packets of Truvia (1 packet= 2 tsp of sugar)

2 TBS of pure pumpkin

1 TBS of coconut oil

1 TBS of water

1/2 tsp of vanilla

1 TBS. of Lily’s Chocolate Chips

One shake of cinnamon (I just wanted a hint of cinnamon)

I mixed it all together and popped in the microwave.  It took about 1 minute and 30 seconds to be baked.  I put a little dollop of whipped cream on top.  HOLY CATS!  This is off the hook!!!

You could always use some bits of Skinny Chocolate!  One other alternative would be a 86% cacao chocolate bar like, Lily’s brand.  I did really love the addition to my Muffin!!  It made some gooey bites that were heavenly!!!!

Pumpkin Spice Pudding- FP

sweet-pumpkin-puddig-mainLast week I was inspired to make some pumpkin pudding after making a pumpkin frappe!   Fall is full of pumpkin and apple flavors in my mind so this was a natural fit in my day.  I was thrilled that it turned out so yummy the first try!  I’ve been making the Choco Pudding from the Trim Healthy Mama book for months but, it’s nice to have more flavors to enjoy!

Pumpkin Spice Pudding- FP

2 cups of almond milk

1/2 cup of pumpkin (plain ol’ pumpkin)

1 1/2 tsp of gluccomanan

cinnamon and clove

1 tsp of vanilla

Sweeten with stevia!  I put in two little packets.  You can stick your finger in and taste it to see if you need more.

EASY!!!  I dump all my ingredients into my Ninja and get it going.  After a few seconds I add in 1/2 tsp of the gluccomanan.  Blend some more and add another 1/2 tsp.  Repeat one more time!  I mix it until I see it is thickened up.  The gluccomanan takes awhile to thicken up in the blender.  It will start to “glug” “glug” as it gets thicker!  I pour mine into two small glass jars and stick it in the fridge.  I didn’t even need whipped cream!
