Sarah’s Sausage and Peppers Pasta! (S)

I love sharing easy, on-plan recipes with you that go with the Trim Healthy Mama plan!  Sarah is one of the Admins for the Beginner Board with me!  She and I had become friends due to THM long before that!  She has now lost…..drumroll….110 pounds on THM!  Seriously!!  She has done amazing!  If you want to read her story, you can read it on the Trim Healthy Mama website: Sarah’s testimony.  She’s the bottom story.

Sarah gave me this super easy and affordable recipe the other night!  She says it’s a favorite at her house!  I made it one day and loved it as well.  I thought I’d toss the idea over to you all!

Here it is in the pan, just getting started in the skillet!  Such pretty colors!



Sarah’s Sausage & Peppers Pasta! (S)

  • 1 package of all beef kielbasa
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/2 sliced onion (I added that)
  • 1 can of beef broth (14.5 ounces or so)
  • 1 box of Penne Dreamfield’s Pasta
  • salt
  • pepper
  • 1 tsp. parsley (fresh is her preference but, you can use either)

You could of course use all green peppers if you wanted too but, this is pretty on your plate!  Sarah says, “I slice the kielbasa and peppers and sautee over medium heat. Til the meat browns up and peppers soften. I add the can of beef broth and let it simmer. Add salt, pepper and parsley. Boil the penne, drain and set aside.  (Make sure you follow the directions on the box!)  I pour the broth, sausage and peppers over the pasta & mix well. Top with parsley. Its delicious! We double it. Simple & cheap too!”  Sarah told me she also puts a little more parsley on top for a pretty garnish!  This should serve about 4.   That’s my guess!  I added onions to the recipe so, I hope Sarah forgives me!  I knew you all would spot the onions in the picture!

I should’ve snapped a shot of it when it was all pretty on my plate but, I gobbled it up too fast!

Cheesy Bread (S)

Angel’s at it again!  She’s the one who came up with the Rockin’ Roll Cake so many of you love!   She’s always creating something new in the kitchen for us to try that is Trim Healthy Mama friendly!   This new recipe is sure to be a HUGE hit in your house.  She got some ideas from this post by Julie for pizza! She tweaked it to make her own version of Cheesy Bread.

Angel and her hubby have been a THM or a while now and they are both down about 25 pounds each!  You can find some THM recipes and other wonderful posts here: Whatsoever is Pure.  This is linked to her newest post about their upcoming adoption.  What a beautiful story she paints as they go through this time of waiting.

Without further ado…..



Cheesy Bread! (S)

  • 2 cups of eggs whites (you can use carton egg whites)
  • pinch of cream of tartar (1/4 tsp or so)
  • 1/4 cup of coconut flour
  • 1/4 cup of flax meal/flour
  • salt
  • Italian Seasonings
  • Onion flakes
  • 1/2 cup of grated cheddar
  • 1/2 cup of mozzarella cheese

Beat egg whites on high until they form stiff peaks.  Add the flour and mix on low until it’s all incorporated together.  Add a little salt, Italian seasonings, onion flakes and cheeses.  No set amounts on the seasonings…just add a few shakes!  Mix together well, then spread over a greased parchment paper on a cookie sheet.  Bake at 325 for 15 minutes!

Cut with a pizza cutter to make the breadsticks!  I made 16 breadsticks from my batch.  You can cut them however you want too.  I’m not great on serving sizes with this.  Don’t eat the batch!   I’d say it serves 6 pretty well if you each have three breadsticks!

Coconut Cream Shake! (S)

One of my favorite things to make on Trim Healthy Mama are shakes or frappe’s!  I love playing with different ingredients and extracts to come up with new flavors to enjoy!  I LOVE Swanson’s Premium Whey Protein Powder (vanilla). It is a wonder product that I am very comfortable using.  It’s my recommendation as far as taste and price!  Many use and enjoy Jay Robb’s brand as well and find it convenient if they don’t want to order things online.  If you are trying to save and use a lot of protein powder, I recommend Swanson’s!

Coconut Cream Shake!  (S)

  • 1 cup of unsweetened almond milk (vanilla)
  • 1/2 cup of water
  • 1 scoop of Swanson’s Premium Protein Powder
  • 1 tbs. of Truvia or xylitol
  • 1/2 tsp. of Gluccomanan or Xanthan Gum
  • 1/4 cup of 1% cottage cheese
  • swirl of heavy whipping cream (optional)
  • 1/2 tsp of coconut extract
  • 1 tbs. of unsweetened coconut flakes
  • 1 tbs of coconut oil
  • 12 ice cubes (my preference)

I place all the ingredients in the blender MINUS the ice!  I blend it in my Ninja for about 30 seconds or so.  I then add my ice!  Blend until smooth!  Easy as that!


For a chocolate version you may want to try my German Chocolate Shake!  Do you love bananas?  My Going Bananas Shake(E)  is a yummy treat!

My Birthday Gift and a Trim Healthy Mama Giveaway!

Today has been an emotional day for me!  I’m writing this post the day before my actual 39th birthday!   My mind was whirling today with all the tremendous blessings that God has given to me this past year of my life.   38 had it’s ups and downs but, the UPS outweigh the downs by far!  I have a precious family.  Through infertility struggles, God gifted me two boys.   He also gave me an incredible husband that I truly adore.  (now I’m crying)  Next month is our 15th anniversary!  Here are my three men….three of my most treasured gifts.


This birthday comes with joy!  I have so much more than I did on my last birthday.  I was about two months along in my Trim Healthy Mama journey this time last year and doing well.  God was giving me my health back!  This year has been incredible for me as I see His hand at work.  It is only through Him that I have persevered and stayed on course.  This past year has held many changes…

  • No more blood pressure medicine.
  • From a 26 to a 16 in my pants! 🙂
  • No more heartburn…not once since I started THM!  That was a nightly battle.
  • No more leg swelling when I sit in the car.
  • I can take on and off my wedding ring!  It was stuck.
  • I wore my wedding dress again this past fall when I hit that number! Picture here.
  • I went down a half size in my shoes!  (I didn’t know you could do that!)
  • I can sit in the tub and have a few inches of space on the sides!
  • I can fit in a booth very comfortably!  I used to need a table!
  • I wore a belt this past Sunday!  A BELT!!
  • I walked a 5K this past summer and plan on two more this summer! (CrAzY!)
  • I have a lot more energy! I can keep up much better with my boys!
  • I can help with hauling wood or chores outside that I couldn’t do before.
  • My 7 year old can hug me around the waste and touch his hands together. He noticed that the other day. 🙂
  • Seat-belts fit much better!

I can name many more!!  Sometimes sitting and counting these little non-scale victories are so encouraging to my heart!  It’s not just about the inches or the pounds, it’s about being healthy!

Mom’s Breakfast Casserole! (S)

My mama is a great cook!  She would make this wonderful casserole for brunch that was a big hit with my husband and I.  I’ve been trying to make Shan breakfast in the mornings and came across my recipe card from mom.  With a few little tweaks it was THM friendly and just as yummy as when she makes it!  This equals a very happy husband!


The BEST Breakfast Casserole (S)

  • 8 eggs
  • 6 cups of cheddar or colby jack cheese
  • 1/2 cup of unsweetened almond milk
  • 1/2 cup of golden flaxseed flour
  • 1/4 stick of butter
  • 1/2 pound of diced ham
  • 1/2 tsp of onion powder
  • 1/2 tsp of garlic powder
  • 1/2 tsp of parsley
  • 1/2 tsp of chives
  • salt and pepper

Pre-heat the oven to 350.  I spray  a 9 by 13 baking dish with cooking spray.  I beat the eggs and then mix in the rest of the ingredients, minus the butter.  The deli will give you a nice piece of ham that you can dice or you can find it pre-packaged in a 16 oz bag. I usually buy it pre-packaged and I can get a few casseroles out of it or use it on salads or in breakfast burritos.  After it’s all well mixed, I cut the butter into little pieces and dot it over the top of the casserole.  I bake the casserole for 45 minutes to 1 hour.  I keep my eye on it to see when the top is browning nicely. This serves 12!   I often cut the recipe in half for the two of us but, the large casserole is wonderful for serving others or to last for quite a few days!  It heats up so well!  This recipe is great as well baked in cupcake tins!  I’ve done this for a grab and go portion.  You would need to adjust the cooking time though to 20 to 25 minutes.  Keep an eye on them.  This is a great recipe to stir up the night before so that you can just pop it in the oven in the morning.  Easy peasy!

*Add your favorite veggies!  Green peppers, onions, mushrooms, etc.  You could even add in some chopped bacon!  Serve with a dollop of sour cream and salsa for a Mexican flair! I love it like I originally posted it.  It’s just plain GOOD!

My Top 5 Fuel Pull Snacks!

Fuel Pulls can be tricky for some folks!  I thought I would share with you some of my favorite Fuel Pull snacks!  I love using Fuel Pulls as my snack when I’m focused in on losing stubborn pounds!  I have some VERY stubborn pounds at the moment that need to hit the road!

#1- Nighty Night Custard!  Oh my yumminess!!  Serene came up with this recipe a few months ago and I will be hugging her neck one day for it! Hugging her for writing the book is a given but, this recipe is a HUGE favorite for me!  Cold Ohio nights (or days) call for this warm treat!   I love it as Pearl does….plain with a little cinnamon on top!  To make it a Deep S snack, add in a TBS of coconut oil!  Here is the recipe for Nighty Night Custard.


#2- Lavish Delight…it’s my go-to dessert if I want a Fuel Pull on THM.  I know many of you have seen this one already but, I have to have it on my list!!!  🙂 Pin for Pinterest:   Lavish Delight


#3- Refrigerator Oatmeal!  I know, you may be thinking that this is only for breakfast!  NO WAY!  I love it way too much.  This is one of those quick, easy treats that I make up a few at a time and stick them in the fridge!  I want to make sure I have easy access to this lovely snack if the urge arises!

I know there are many recipes out there at this point! I’ll share mine with you!  I put this all in a mason or jelly jar.

  • 1/4 cup of old fashioned oats
  • 1/3 cup of unsweetened almond milk
  • 1/4 cup of 0% fat Greek yogurt
  • 1/2 tsp of vanilla
  • 1 tbs of Truvia (or us another plan approved sweetener)
  • 1 tsp of chia seeds
  • 1 tbs of Swanson’s Premium Vanilla Protein Powder
  • top with berries(keep under 1/2 cup if you use blueberries)

I enjoy this as an E meal or breakfast as well with peaches, extra blueberries or apples!

#4- Angel’s Cake- Fuel Pull!!!  Who doesn’t love cake?  I know I sure do!  Some of you geniuses have even used this recipe to make THM style donuts!  That was so cool to see!  They used a doughnut  maker and then coated them with Skinny Chocolate!  (Page 371)  To keep this one a FP you can follow the recipe!  I even added a few topping suggestions that will keep it a Fuel Pull.  Here’s the recipe for Angel’s Cake-FP.  Here is a Pin for this recipe: Angel’s Cake-FP


#5- Cottage Berry Whip!!!  If you have your book it’s on page 379. It’s a true gem! The Biggest Loser vs. Trim Healthy Mama

My husband and I have been watching The Biggest Loser since the first episode.  This past Tuesday was the first time I’d been really disappointed watching the finale.  In years past I would watch the final show excited to see each person come on the stage, some ripping open the paper that held a picture of their former self.  This time, my heart was sad.  I used to dream of being that girl on the scale at the beep, beep, beep was tracking how many pounds she’d lost.  I was shocked each week when numbers like -18, -10,-28 popped up on the board.  Now, I watched with new eyes.  This year I watched concerned and a bit sick to my stomach at times.  What changed?  Well, it wasn’t the show!  It’s been the same since the beginning…it was me.

This girl would watch the show with a huge bowl of ice cream and a Dr. Pepper.  I lived through those folks weighing in, wishing it was me!  I so wanted it to be me.


I know what many of you think of what I just said and what you thought of me.  Just do it!  Why didn’t you start?  What took you so long?  Why didn’t you just go workout?  Why?  I wasn’t ready.  God hadn’t worked in my heart about it all.  I was sick, uncomfortable and depressed.  Yes, I was.  God had to work and He did!  God had been working in my heart for a long time in this area of obesity/gluttony.  I love God’s word and long to be closer to Him yet, I had this besetting sin that I needed to deal with.  God used a book to open my eyes and to speak to my heart.  You all know what it is!  Besides His word, Trim Healthy Mama came into my life.  It was like a light-bulb went off in my mind.  I asked myself questions as I read…

“Jen, what have you been doing to your body?”

“Why have you let things go this far?”

“God’s given you one body.  Why are you mistreating it?”

I was ready.  I was repentant of my sin and ready to work.  One chapter that is great to read in light of extreme, quick-fix dieting is “Life Long Approach”(chapter 12).  As I watch BL this past week these words rang in my heart.

“Unless you are extremely overweight, which makes dropping large amounts of pounds naturally faster, we don’t want you to lose much more than a pound a week.   Rapid weight loss becomes catabolic, which means there is more breaking down of the body than building up.  It goes against the anti-aging premise of this book.  Run far away from magazine and book headlines that scream, “Six Weeks to a Bikini Body!”  Titles like that are the nemesis of this book.  Don’t think of this as a race, but a lifelong approach.

Diets that tout ridiculously fast weight reduction, tax the adrenal glands and mess with your hormones.  The catabolic hormone cortisol, which comes from stress, will start to pump through your body if you shed weight too fast.  After a while, this high cortisol state will cause your weight to plateau and your results will halt. ” Trim Healthy Mama, Page 120

I recently went to the doctor and he also talked about losing about a pound a week and how that was a healthy rate of lose.  Yes, some weeks I lost more in the beginning as I had more to lose.   I’m losing at a slower rate now which is perfectly fine with me.  My body is healing from years of yo-yo dieting.

My heart aches for men and women who watch these reality shows and become discouraged when they don’t lose as quickly.  These folks on tv are working out for 6 plus hours a day!  That’s not even healthy!  Their diet is extremely low calorie and low in fat which is not a great way to lose weight and stay healthy.  Fat is good for you!  Good fats, that is.   As I watched the finale I was sad for the winner, Rachel.  She was a force to be reckoned with on the show!  She won most of the challenges so it was easy to see her competitive spirit.   I knew she would most likely win the show.  When she walked out at 5’5 and 105 pounds, I was taken back.  She is considered underweight at that weight for her height.  I won’t assume she has an eating disorder or that she did this only to win.  I don’t know her and it’s not my place or intent with this post.  I will say that it re-enforced my love for THM and for losing it slow and steady.  I didn’t watch this season wishing to be on the show losing massive pounds.  Honestly, I could never go and  leave my family like that.  I watched praising God that I have come so far.  May God get the glory for all He is doing in me.


So, I’m not The Biggest Loser but, that’s okay with me.  I’m on this journey that God has for me.  I continue to have Him helping and guiding me on this path.  I’m not saying THM is the answer for everyone but, I know how it’s helped me!  If you want to know more about it, you can check out their website.  The book is not just a book but, a textbook on living a healthy life!

My Top 5 Side Dishes~ (S)

Do you ever get bored with the same foods?  I know I can sometimes.  I wanted to share my top 5 favorite side dishes that I use with S meals at my house!  Here we go!

#1- Green Beans cooked in butter, minced garlic and bacon!!!  This sure brings green beans to a whole different level!  Salt and Pepper of course! I love seasoned salt in this recipe.


#2-  Don’t forget a beautiful salad.  I often eat a salad for my full meal with some added protein.  I am in LOVE with spinach.  It is so full of vitamins and good nutrients.  I keep a bunch of hard boiled eggs in my refrigerator so I can add some good, farm fresh protein to my meal at any time!  To keep it a nice Deep S, I add on some lovely olive oil, lemon, salt and pepper.  YUM!!


#3-  Radishes!  There are moments when I’ve really wanted some red skinned potatoes!  I learned a cool trick that many of you already know about…use radishes!  If I am cooking a roast for dinner in beef stock all day, I add in a bag of radishes in the afternoon.  They take on the flavor of the roast just like potatoes do!  I didn’t believe it til I tried it!  I mash mine with my fork, add some butter, salt and pepper!


#4- Creamless Creamy Veggies- from the THM book on page 352!  I like to just use broccoli but, you can use whatever you like.  The book gives great instructions and suggestions.  This recipe in the book is a Fuel Pull at heart so you can make it an S or and E by adding ingredients to it.  I like to add some butter so mine becomes a nice S!

#5- Loaded Cauliflower Casserole-  Oh my.  This may be one of our favorite things to eat…PERIOD.


  • I cook a bag of cauliflower til tender
  • Drain well
  • Pour into a greased baking dish(9 by 9)
  • 4 Ounces of cream cheese
  • 1 cup of cheddar cheese
  • 1 tsp. of minced garlic
  • salt
  • pepper
  • 4 pieces of bacon, crisped and diced (add it in)
  • 3 Tbs. of butter cut in little pieces

~Mix it all together and sprinkle a little more cheese on top!  350 for 30 minutes!  I’m telling you’s good!  I know there are many recipes out there for this type casserole.  I love eating this with a nice steak and a side salad!

Lavish Delight! (FP)

This is my favorite Fuel Pull snack or dessert!  I just wanted to share it with you.  SO easy and quick to put together!  Friends of mine used to make a dessert with Cream cheese and crescent rolls.  This reminds me so much of that dessert, but healthy!!

German Chocolate Shake! (S)

There is an ice cream joint in a town near us that has the best ice cream in Ohio!!  In the past we’d go there often after dinner and I’d get the same ice cream each time, German Chocolate.  I don’t know why but, for as long as I can remember it was my favorite flavor.  I love the protein shakes that Trim Healthy Mama has brought into my life.  I really like Swanson’s Premium Brand Whey Protein powder.  I have loved making many different flavor combinations over the past year and thought I’d share one of my favorites!  After missing my favorite ice cream I came up with a shake that satisfies my craving for the old favorite!  I feel super satisfied and knowing it’s sugar free and healthy makes it so worth it!


German Chocolate Shake

  • 1 cup of unsweetened almond milk (vanilla)
  • 1/2 cup of water
  • 1 scoop of Swanson’s Premium Protein Powder
  • 1 tbs. of cocoa powder
  • 1 tbs. of Truvia or xylitol
  • 1/2 tsp. of Gluccomanan or Xanthan Gum
  • 1/4 cup of 1% cottage cheese
  • swirl of heavy whipping cream
  • 1/2 tsp of coconut extract (optional but, I love it!)
  • 1/2 tsp of vanilla extract
  • 1 tbs. of unsweetened coconut flakes
  • 1 tbs of coconut oil
  • 1 ounce of 85% chocolate (I use Aldi’s brand)
  • 12 ice cubes (my preference)

I honestly put the wet ingredients in the blender or my Ninja and dump in the dry ingredients.  I do cut up the chocolate into a few smaller pieces before adding it in.  I then blend for 30 seconds or so before I add in the ice! Add the ice and let it mix til it’s a shake like consistency.

This is a great way to get your protein and to start the day off with some healthy coconut oil!  I love the benefits it brings to my lifestyle!  I hope you’ll love this shake as much as I do!!!  I don’t feel deprived on my eating plan.  I honestly LOVE it or I’d not have been doing it for over a year now!  You can read about that on my One Year Trim-a-versary post! 🙂
