Sugar-Free Cranberry Muffin-in-a-Mug! (S)

I bought a bag of cranberries after seeing so many yummy cranberry recipes floating around this month!  I decided to try my hand at a muffin-in-a-mug type recipe with the cranberries!  It turned out so good the first time!!  I was thrilled! You could easily substitute blueberries (1/4 or so) in this recipe if you don’t have cranberries.  Just be careful that you don’t put too many blueberries in it and unless you want a Crossover treat!  It would be good with raspberries or strawberries as well.  The muffin recipe itself is my favorite!!!!  I like it plain as a sugar free yellow cake!

Sugar-Free Cranberry Muffin-in-a Mug  (S)

1 egg

1 TBS. of water

1&1/2 TBS. of coconut flour

1&1/2 TBS. of golden flax flour

1 TBS of coconut oil(MCT oil or butter would work too)

1 tsp. of vanilla

tiny pinch of salt

1/2 tsp of aluminum free baking powder

10 cranberries (yes, I counted!)

1 TBS. of Truvia or 2 tsp of xylitol

Mix up well in a microwave safe bowl or mug!!!  I microwaved this for 60 seconds then another 30 or so seconds.  It really depends on how hot your microwave is.  I check it at one minute to see how the top looks.  If it’s still shiny and wet I bake it 30 seconds more at a time until I know it’s done.

My go-to Frosting:

1 TBS of Cream cheese(soft)

1 TBS of butter(soft)

sweetener of choice(I use Truvia)

1/2 tsp of vanilla

The frosting is SOOO good!  It’s a bit lumpy in my picture this time but, it’s normally smooth.  The lumps don’t effect the taste so, I didn’t mind.

Isn’t this pretty?!  It’s so delicious too!  Tart and sweet at the same time.  I love that combo!

70 Pound Update~ Trim Healthy Mama

11 months on Trim Healthy Mama for this girl!  The journey has been sweet.  Sweet has a few meanings in that sentence.

  1. I have many “sweet” weight loss goals to celebrate.
  2. I have many “sweet” non-scale victories that thrill my heart.
  3. I eat yummy sugar-free desserts all the time that are delish!

I will be the first to admit how far I have yet to go. I don’t know an exact goal weight that I’d like to reach but, being healthy is the goal!  I would estimate that I have another 84 pounds are so to lose on my journey, give or take a few pounds.

The added bonus to my journey the past few months has been helping others.  I’ve been working personally with a few dozen ladies on THM for quite a while now.  Added to that has been working with the THM team and getting to help in the group with thousands of ladies working the plan.  What a joy to help others and see them doing so well.  I know God has placed this in my life as a ministry and to keep me accountable.

I post these updates not to boast in myself but, to boast in God and all He’s done for me!  I also post to encourage someone who comes to my page that is hurting, struggling and looking for a boost!  To God be the glory for all He’s done in me and through THM.

Here I was….so miserable.

I use this before shot of me since much of me is in it.  I was the one taking pictures, not the one in the pictures.  This was Sept of 2012.

The past few months I’ve been steadfast to the plan and stuck with it even when I was at Thanksgiving, potlucks and get-togethers!  It’s really  not that difficult to stay on track if you set your mind to it.  Being prepared really does help!  I take food along to share with everyone that I can eat too.

During a time when I was “stuck”…I realized I needed to add more E’s to my week.  I was doing about 2 a week and that just wasn’t enough to keep my metabolism guessing so I started to eat one or two a day!  I did well for a while but, then realized now that I’m eating too many E’s for my body so I’m backing off of them a bit.  I’m going to stick with 5 E’s a week and see how that goes.  The plan is really about learning how your body responds to food and making changes to fit YOU.  Don’t get discouraged when you become stalled for a few weeks..or even a month!  I’ve been there a few times and if you stick with it, you will see the scale move.  Your body goes through times of adjustment and healing.  Just work the plan and it will come off!  Slow and steady will win the race…eventually!!!  The plan is NOT fast and furious.  I appreciate that so much as my body is adjusting well as I go.  I also feel much healthier losing at a slow pace.

During this past 10 pounds I hit my wedding weight!  I know many of you saw the crazy pictures I posted in my dress! My family may think I’m crazy but, it was a fun day for me!

I didn’t take a 70 pound goal picture like I’ve done in the past but, my friend Angel at Captured by an Angel Photography took our family pictures this past Saturday.  If you are in the Columbus, Ohio area you should have her do your family pictures, wedding photos, etc.  I thought I’d just post one of all four of us!

60 Pounds- Trim Healthy Mama

I am keeping track of my progress here on my blog for my own benefit. It took me two months to lose this past 10 pounds.  THM is not a quick fix, extreme weight loss, bandaid diet.  I am so thankful for that!  The longer it takes me to lose it…the more I feel like I am learning and making life-long eating habits!  Would I like to lose speedily?  Sure! I think everyone would but, it took lots of time to put on the weight I have so, it will take me time to get it off.  I am doing a lot more than losing weight. I am taking steps that are changing my life and how I live.  I am making myself healthier physically but, slaying my demons as I go.

I don’t physically feel like 10 pounds looks a lot different on me.  My clothes are looser and I’m down to a size 18 which is so neat!  It’s been a LONG time!  I have a lot more energy.  I feel like some are waiting for my failure.   I know that’s the truth of the matter.  “She’s done this diet gig before and gained it all back… plus some.”  I will say that I’ve never stuck with a program for this long.  I did weight watchers years ago..over 11 years ago and did very well.  It wasn’t a life-long eating program that I could stick with so, VERY quickly I gained it back.  I let some emotional hurts and broken promises bring me down.  I was a different person then with different dreams and goals.  I let music and singing rule my life at that time.  When things didn’t go how I wanted, I was selfish, hurt and became so low.  I wasn’t letting God’s word show me who I was to be in Him. I wasn’t surrendered to Christ and His purpose for me.  A big part of how successful we are in slaying demons and sin has to do with how our walk with the Lord is.  I must stay focused on Him and living on my knees in repentance.   I realize that many of you checked out just then or think I’m a religious nut.  I’ve been called worse.

So, here I am.  Praying this resonates with someone’s heart.  Are you struggling?  Maybe you need some time with God to rest in Him, ask forgiveness and to make a fresh commitment to fight those sins with Him that are plaguing your life?  He gives us new mercies each morning and He is faithfully waiting.

I will fight.  I will stay on my knees with God and keep focused on the path He has me on.

Pumpkin Spice Pudding- FP

sweet-pumpkin-puddig-mainLast week I was inspired to make some pumpkin pudding after making a pumpkin frappe!   Fall is full of pumpkin and apple flavors in my mind so this was a natural fit in my day.  I was thrilled that it turned out so yummy the first try!  I’ve been making the Choco Pudding from the Trim Healthy Mama book for months but, it’s nice to have more flavors to enjoy!

Pumpkin Spice Pudding- FP

2 cups of almond milk

1/2 cup of pumpkin (plain ol’ pumpkin)

1 1/2 tsp of gluccomanan

cinnamon and clove

1 tsp of vanilla

Sweeten with stevia!  I put in two little packets.  You can stick your finger in and taste it to see if you need more.

EASY!!!  I dump all my ingredients into my Ninja and get it going.  After a few seconds I add in 1/2 tsp of the gluccomanan.  Blend some more and add another 1/2 tsp.  Repeat one more time!  I mix it until I see it is thickened up.  The gluccomanan takes awhile to thicken up in the blender.  It will start to “glug” “glug” as it gets thicker!  I pour mine into two small glass jars and stick it in the fridge.  I didn’t even need whipped cream!

Before and So Far

Exhausted, sluggish, bloated, uncomfortable and sick.  That was me in January.  I could add embarrassed and discouraged to the list as well.  I can say that God is faithfully doing a work in my heart and body that I am so thankful for.  I will say right off the bat that I could not be on the journey I am on…alone.  I have Jesus.  I have a great family.  I have a wonderful church family and a community of  ladies who keep me accountable.  I don’t remember how I heard about Trim Healthy Mama.  I know it was from a like-minded friend on Facebook.  Two homeschooling mamas did YEARS of research and wrote a book together about health, fitness, hormones and eating right.  I was intrigued!  You see, I’ve tried it ALL!!  I’ve been on so many diets that I can’t remember all their names!  I will name a few that you will be familiar with.

~Weight Watchers ~ Jennie Craig ~ Formula 3 ~ Atkins ~ Physicians Weight Loss Center

That’s the tip of the dieting iceberg!  I had some success with these different plans but, nothing that is like Trim Healthy Mama.  I was so tired of counting calories, fat, carbs…you name it!  No more counting is freeing!  For you men who are worried…they are revising the book and it will be called Trim Healthy You in the future!  🙂

Here I am at my heaviest…304.  Wow!  I know many of you wouldn’t tell your weight in a million years!  It’s apart of my story though and I pray it will encourage someone else!

I remember this day well!  I had taken the boys to Jungle Island in Miami Beach for the day.  It was so hot outside and I felt like dying!  I was soaked in sweat and I could hardly keep up with them to walk around.  I had to sit down frequently during the day.  I checked the schedule for shows that we could go sit and watch.  I wanted the boys to have fun yet, I was struggling just to make it through the park. Miami was a hard week for me.  Walking anywhere we needed to go in the heat made it hard to do much of anything for me. I felt like a party pooper!  I felt like we couldn’t enjoy ourselves that week because of me.

I don’t know what shifted in my mind but, I know it was all the Lord’s doing..His work.  In January I purchased the book.  Trim Healthy Mama was written by two sisters, Serene and Pearl.  They have a deep passion for health and had been studying and writing this book for over 5 years!  WOW!  I’ve learned things about my body that I’d have never known before reading the book.  I started implementing the plan in the book the second week of January.  No January 1st resolutions.  I’ve always failed at those!  I waited til the week after!

So, here I am 7 months later still plugging away.  It’s not a speedy weight loss plan.  It’s honestly a new way of eating.  No more junk!!!  No more garbage.  No more sugar highs and crashes.  I have gone from a size 26/28 to a size 18/20.  That has been so nice!!!  Trying on size 18’s again has been a lot of fun.  I have also lost 50 pounds!  I am at 253.6 today.

I’m not positive what my goal weight will be.  Maybe 150 but, my main focus in on being healthy.  I was telling my youngest son the other day that being skinny does not mean that you are healthy!  I know many thin folks who fill their bodies with junk.    My other goal is to be off of my blood pressure medication.  I think I’m getting close to that goal!

I know some of you are mortified at my current weight but, I feel so much better!!!  I can do so much more now than I could then!  I help Shan on our farm a lot more now than I did last summer!  I used to sit inside or find things to do while he and the boys would do laborious jobs in the barn or the yard.  Now, I try my best to help and to work along side of them.  I smile when I see my 6 year old and know that I’ve lost his weight in body fat plus a bag of potatoes!

I will continue to share about my journey with you!  This is just a before refection and to show you where I am now,  50 pounds into my journey!!   Here is a picture my mom took for me on Friday when I hit my first big goal!
